Intriguingly, this Sauvignon Blanc from Chile is fermented in three parts, three different ways: one third each in oak barrels, stainless steel, and clay amphorae.

It's also delicious,  bursting with peach, lime, and apricot alongside granite and sea salt, imparted by the San Antonio Valley's proximity to the sea.
