MAISON FERRE is home to traditional cider from the Perche region of Normandy, France. "La Cave de Gabriel" translates to Gabriel's Cellar - named after cider maker Gregoire's grandfather. Made in the traditional method, they press the juice with a wooden press built in 1954. It's labor intensive, but a beautiful ode to the multi-generational traditions this family has.
The fermentation occurs from indigenous yeast and the must (juice) is not pasteurized. A secondary fermentation occurs in the bottle with the addition of yeast (as in Champagne). It finishes its fermentation in bottle over the course of at least 3 months, and then is aged in bottle prior to it's release.
