OVUM 2022 Dry Riesling 'Off the Grid' (Illinois Valley, OR)

OVUM is a really cool project we are excited to have on our shelves. The woman behind the wine is dedicated to making wine with low intervention, to showcase the fruit best. This dry riesling features native yeast fermentation in concrete egg, Austrian cask and neutral barrel. 9 months of less contact adds a bit of body, and then the wine is racked and blended. Rich and textured, with deeper colour. Notes of ripe apricot, Eureka lemon, thyme.
