Deep in the South of France, where sunlight and heat abound, we don’t expect to find Pinot Noir – the grape that can’t handle too much sun. Yet, here, the Pays D’Oc IGP represents such a wide array of microclimates that we are turning our heads at the Pinot Noir coming from the cooler sites found here. The daytime sunlight pulls of lots of aromas and flavors, while nights cooled by the ocean breezes moderate the temperature and keep the grapes alive.
